Healthy Banana Oat Muffins

Happy Tuesday! Today I'm sharing the recipe for some healthy banana-oat muffins I made over the weekend. My recipe is based on this one from Better Homes & Gardens, but I think my version is both healthier and easier to prepare than the original. These hearty, whole-grain muffins are also light and not too sweet. They're perfect for breakfast or for snack, and I love that I now have a new go-to banana muffin recipe after I lost track of the most delicious whole wheat, coconut oil banana chocolate chip muffins recipe I was using.  

Healthy Banana-Oat Muffins
(*Note: The measurements in this recipe yield enough batter for SIX muffins, which I didn't realize until I couldn't figure out why I couldn't adequately fill 12 muffin cups. If you want a full batch of muffins, doubling the recipe should be fine.) 

1/2 c white whole wheat flour 
1/4 c rolled oats
3 tbsp. coconut sugar
1/2 tsp. baking powder
1/4 tsp. cinnamon
Dash of salt
1 ripe banana 
1/4 c unsweetened almond milk
1 egg white
1 tbsp. canola oil
Additional oats, chocolate chips for garnish (optional)

1. Preheat oven to 400 degrees.
2. In large bowl, combine flour, oats, coconut sugar, baking powder, cinnamon, and salt.
3. In separate bowl, mash banana thoroughly with fork.
3. Mash/mix in almond milk, egg white, and canola oil with banana (the original recipe says to blend up all the wet ingredients, which is totally fine, but I found the muffins came out perfect sans blender). 
4. Make a well in the center of the dry ingredients, and pour in wet.
5. Mix well, and pour batter into greased muffin tin, filling each muffin cup to about 3/4 of the way full.
6. Top muffins with additional oats and a few chocolate chips each, if desired.
7. Bake about 16 minutes, until browned on the top and toothpick inserted into center comes out clean. Cool on baking rack 5-7 minutes and enjoy!
