Chocolate Chip Banana Bread Baked Oatmeal

Today I'm really excited to share this recipe for banana bread baked oatmeal after I teased it on Instagram on Sunday. Let me tell you— it tastes exactly like banana bread. It essentially is banana bread, but with oats instead of flour and less sugar than the original. It is so good and ridiculously easy to throw together, and you probably have all of the ingredients already. I eat this for breakfast, dessert, snack; it's great to cut into squares to take with you or to enjoy at home after warming it up for a few seconds in the microwave. I've altered this recipe from the original, which can be found over at The Roasted Root.



Mix everything up! (How gross does that look, though? Haha)


Stir in your chocolate chunks...


...and you're ready to bake!

Banana Bread Baked Oatmeal
2 cups rolled oats
2 tsp cinnamon
1 tsp baking powder
¼ tsp salt
2 ripe bananas, mashed
2 eggs, lightly beaten
2 cups almond milk
2 tbsp coconut sugar
1 tsp vanilla extract
2/3 cup chocolate chunks (you could definitely use less, but I love chocolate)

1. Preheat oven to 350. Lightly coat 8x8 pan or glass baking dish with cooking spray. 
2. Combine all dry ingredients in bowl (...or just skip this step to make this a one-bowl recipe. I promise that it turns out the same). 
3. In large bowl, whisk eggs thoroughly with mashed bananas. Add milk and vanilla and stir.
4. Add dry ingredients to wet, mix well, and fold in chocolate chips. 
5. Pour oat mixture into greased pan. 
6. Bake 35 to 40 minutes or until center tests clean with a knife or toothpick.
