Five-Day (Sort Of?) Vegan Challenge

I know I mentioned in a recent post that I wanted to go vegan for five days. The time has come... sort of. The plan is to go dairy and meat-free for just under a week. Not having meat shouldn't be too hard because it's something I do without decently often, and I've already swapped out skim milk for almond milk. That really leaves only cheese and eggs, the latter of which I may not give up completely. I'll make an effort, but I feel like I'll probably end up eating a few eggs anyway.


All that being said, I rounded up a few simple, vegan-friendly recipes to try this coming week.

Smashed White Bean + Avocado Sandwich (spinoff of this recipe, my recipe below)

1/2 15 oz. can white beans
1/2 ripe avocado
1/2 tsp. Dijon mustard
1/2 tsp. dried thyme 
Olive oil
Dash of chili flakes
Salt and pepper to taste
Greens for garnish 
Two slices bread

Throw two slices of bread into the toaster while you prepare the filling (totally optional but I highly recommend it). Smash white beans with a fork, leaving some beans whole and some larger pieces. Add the avocado, and smash beans and avocado together with a drizzle of olive oil. Add Dijon, thyme, chili flakes, salt, and pepper. Spread filling on one slice of bread, add greens, and top with remaining bread slice.
