What I Eat in a Day

For some reason, I really enjoy watching videos on YouTube of what people eat in a day, so I thought I'd make a post on what I eat in a day. My eating habits aren't always the best because they can be inconsistent; though I eat pretty healthy/clean, I'll find myself replacing meals with snacks or skipping lunch altogether (I also hate to cook, so that doesn't help). I've been trying to be better about this. Below is what I might eat on an ideal day. 

Breakfast: I'll typically have a bowl of oatmeal prepared with almond milk and topped with a sliced banana, chopped raw nuts, cinnamon, and a drizzle of honey, or a jar of overnight oats. I like to make fruit and veggie smoothies when I'm home, but I don't have a blender in my apartment, so that's not something I make on the regular. Some mornings, I'll have an egg with a slice of whole wheat toast or an egg sandwich on a whole wheat English muffin. And, though I know I shouldn't, I'll scarf some kind of bar if I'm really pressed for time on a day that I have class. 

Lunch: I'll usually eat leftovers, an egg sandwich, or avocado toast topped with shredded coconut (trust me— it is so good),a fried egg, or smashed white beans for protein. I'm also weirdly obsessed with eating breakfast burritos at all times of the day. 

Dinner: Varies. I eat a lot of Mexican-inspired food because it's my favorite and it's easy, so think recipes like turkey taco quinoa (this is so good), Crockpot sweet potato chili, spinach enchiladas, and salsa verde chicken. I also make things like black bean burgers, whole wheat pasta, breakfast burritos (told you), and veggie omelets with side salads.

Snacks: I am obsessed with Trader Joe's Happy Trekking trail mix. I'm also a huge fan of bars (granola, cereal, Lara, etc.).

Dessert: I need to have something sweet in the evening. I just do #noshame. I'll usually have just a small piece of chocolate (dark chocolate is a mood-booster so I can justify that), a cookie, a mug of cereal, or some berries with granola and honey, but sometimes I'll treat myself to a (somewhat) healthier mug cake made with better-for-you ingredients like whole wheat flour and coconut sugar.
